Yummy and oh so simple popsicles

I used coconut.milk and orange juice, grapfruit juice and finally blueberries (had to heat the blueberries until softened) yum!

Fill ice cube tray half way with coconut milk, freeze until hard.

Fill the rest the way with fruit juice, veggie juice, or whatever you like

Freeze again, insert toothpicks if you want or enjoy as icd cubes :-)

Browned Zucchini with Parmesan

High in manganese and fiber and low in calories, zucchini are an excellent choice for a serving of vegetables. The smaller the zucchini, the more tender the flavor. I tend to pick zucchini in green and yellow, about 6 inches long.

This is a childhood favorite recipe, try it for yourself! Heat ~1 T olive oil in pan. Slice zucchini in thin circles, lay in pan. Make sure the oil is hot when you put the zucchini in the pan, allow to sizzle until a brown layer forms on the zucchini. Toss in pan, add pepper and shredded parmesan. Enjoy!

Power snacks!

Hello everyone, I'm back online! Wanted to jumpstart today sharing some of my favorite power snacks, each around 300 calories, quick to make and doesnt taste half bad, if I say so myself :)

1. 1/2 cup cooked black beans, 1/2 cup cottage cheese, 1/2 avacado. Heat the black beans, put the cottage cheese on top, slice avacado and place on top....yum! Full of protein, fiber and energy boosting to boot!

2. WASA cracker, goats cheese, green bellpepper.  Can use wheat thins or other multigrain crackers, wasa is  available almost eveywhere, fat free, sugar free, better carb values than other crackers.  Layer it up!

3. Deli turkey or chicken, cucumber, bell pepper, and carrots. Slice all veggies lengthwise into this spears, wrap with  deli meat. You can dip this in a little italian dressing for an extra flavor boost. Crunchy, salty, filling  and crave-curbing!

Chopped Salad in a Lettuce Wrap



2 beets, peeled and shredded
1 green apple, shredded
2-3 green onions, thinly sliced
juice of half lemon
1/4 cup walnuts, finely chopped

~Serve in lettuce wrap or in a bowl over quinoa for a heart healthy snack, yum!
